Tapas is one of my favorite ways to eat. Give me a table of friends and lots of little plates of tasty bite sized lunch options and I am a happy lady. This gorgeous pesto recipe by Tara Miko from Happy Hemp is a super tasty variation on the traditional pesto we all love. And spread atop juicy cherry tomatoes is it my bite sized lunch ideal.
Tara uses mint, hemp seeds and pistachios in this pesto. She’s a huge advocate for hemp which has a zillion health benefits. Pistachio Mint Hemp Pesto

1 cup Happy Hemp seeds, raw
¼ cup raw pistachios, shelled
¼ cup olive oil
1 small garlic clove, peeled
½ lemon, juiced
½ teaspoon sea salt
