If you’re like me and realized that years of toast has done you no favors in the health department you’ve probably been looking around for a healthy breakfast alternative. We move pretty slowly in the mornings and as much as I love the idea of a cooked breakfast I know that most mornings its just not going to happen. Having a healthy breakfast alternative that is pre-prepared, delicious and kid friendly is my ultimate morning goal.
Bircher has become a regular hit in our house. I love the creamy texture and the versatility of customizing your own version to suit your family’s tastebuds. I renamed it Breakfast Pudding so that my son likens it to a treat. But really, its a healthy breakfast that fills him up and gives him all the energy he needs to start his day.

KUNARA BIRCHER MUESLI

Serves 2
300g coconut yoghurt
15g / ⅛ cup raw almonds, chopped
15g / ⅛ cup dried cranberries
15g/ 1 tablespoon cup sunflower seeds
15g / 1 tablespoon cup maple syrup or honey
12g / 2 tablespoons rolled rice flakes
25g / 4.5 tablespoons rolled quinoa flakes
1 teaspoon orange zest
75ml / ⅓ cup fresh orange juice
15g / 2 tablespoons chia seeds
pinch of salt
