You see, I didn’t have basil at home but had loads of other herbs in front of me on the kitchen bench and I really wanted to make pesto…so I thought, how can I make a dairy-free, basil-free, super tasty pesto that will blow our taste buds out of the water?! It was a major experiment but the parsley pesto worked 🙂 I’m sure you could make pesto with other herbs too but you’ve gotta love the taste of the herb you’re using…a big hit of it cause pesto is no simple sprinkling of herbs as you know!
My son absolutely loved this but he loves almost anything with cashews in it so we’re pretty OK there!
Dairy free walnut and parsley pesto
1 large bunch of parsley
1/4 cup of walnuts
1/2 cup of cashews (this is in place of cheese)
1/4 cup of virgin olive oil
1-2 large cloves of garlic
1/4 teaspoon of salt (don’t be afraid of making it too salty as it will dilute when you mix with or other food)
Place all ingredients in a food processor and pulse until completely crushed.
Add and vary ingredients to suit taste.
Mix with pasta, spread on toast with poached eggs or any other deliciousness and enjoy.
