This recipe is a household favorite, is super easy and EVERYONE loves it! It is gluten free, dairy free, egg free and super duper delicious. It takes 5 minutes to make and can be used on salads, on toast, as a dip, on salmon or fish, on pasta, almost any savory dish. Let me know the ways you use it in the comments!
Creamy dairy free cashew mayonnaise
1/4 cup cashews
1/4 cup virgin olive oil
1/4 cup fresh lemon or lime juice (preferably organic)
1/4 cup filtered water (use a little bit at a time)1 teaspoon of seeded mustard or just the mustard seeds themselves
1 teaspoon or more of raw organic honey to taste
Blend cashews & salt/pepper in food processor (I use a magic bullet or nutribullet). It needs to be a super fine powder for the creamy texture.
Add olive oil and lime juice and process until creamy. Takes a few seconds.
Add mustard and honey and small amount of water to blend.
Continue adding water until it is the consistency you desire. Voila! Delicious, healthy dressing or mayonnaise you, your family, your children and guests will LOVE!
NOTE: try adding herbs or other flavors to experiment 🙂
