Teressa Fisk AKA Wholesome Cheeky Mumma is not only one of our biggest fans (as we are of her) she is also amazing recipe writer. You can always count on her to throw in just the right amount of cheeky into all of her recipes. She sent this one over recently and admittedly they did not last long at all before being hoovered up by everyone. Teressa’s take on the every versatile slice is nothing short of art. Here is the Cheeky Mumma Coconut Cranberry Slice – just remember, we warned you!
Cheeky Mumma Coconut Cranberry Slice
This is an amazing slice, full of natural flavours, no added sugar and best of all no flour.
Serves 8
1 cup cashews
1 cup Brazil nuts
1 cup walnuts
1 cup puffed brown rice
2 tablespoons of coconut sugar
3 tablespoons of cacao powder
1 1/2 cups of prunes
8 dates
1/2 cup cranberries
1/2 cup of coconut water
1/4 1 cup shredded coconut
Preheat your oven to 390ºF/200ºC.
Line a square slice tin with some baking powder and give it a little spray of oil.
In your food processor, add the cashews,Brazil nuts, walnuts, puffed rice and cacao powder. Blend until you have an evenly crumbled mix. Add this mixto a large bowl.
Then add to your food processor, your prunes, dates, cranberries and coconut water. Blend until you have small chunks.
Add you nut mix back into your blender and mixit all together.
Place your mix into the square cake tin. Try and press this down evenly. Then sprinkle your shredded coconut on and gentle press into the slice.
Place in the oven for around 10/15 minutes. Then let it sit until it cools.
If you’re feeling a little naughty you can serve with some coconut yogurt. Otherwise you know what to do with these Cheeky Mumma Coconut Cranberry slices…did someone say hoover?
