These healthy banana pancakes are a recipe slightly adjusted from The Green Kitchen Stories cookbook (totally gorgeous cookbook by the way). I made it the first time according to the instructions and we just didn’t have enough to devour so I’ve adjusted to make a few more and ease up on the eggs 🙂 Incredibly delicious and you have absolutely no need for the flour part if you are living gluten-free…just add more coconut.
Amazingly Healthy Banana Pancakes
3-5 ripe bananas
1/2 cup wholemeal spelt flour or your choice of gluten free flours (brown rice, almond, chickpea etc)
1/2 cup dessicated coconut
5 eggs
a few tablespoons of organic GMO free soy milk or other milk of choice
1/2 tsp baking powder
1 cup frozen or fresh blueberries or other small berries or sultanas or raisins
Maple syrup or organic raw honey for topping.
Mash bananas in a bowl.
Whisk eggs in.
Add all other ingredients (except berries) and mix well with a mixer or just a wooden spoon.
Add berries or sultanas now.
Heat two pans with a little rice bran oil, macadamia nut oil or other oil with high smoke point.
Slowly add a little dollop and make 4-5 little piklet sized pancakes in each pan or one big one.
Wait a few minutes until golden brown and flip over. Be careful the pan doesn’t get too hot…burning does not = good!
Drizzle fresh raw honey or organic maple syrup and serve with fresh fruit….then DEVOUR…mmmmm 🙂
