This is called easy hummus for a reason as it’s one the most easiest dips to make and only requires you to think ahead one day (or just use canned chickpeas…but you know how I feel about canned stuff). I just soak the chickpeas in fresh filtered water overnight, sometimes two but you must change the water at least once per day. Make sure you have a big enough bowl as the chickpeas will expand to double the size.
We had a bit of fun taking pics of this dip…I took the photos, then left the bowl on the table out on our deck…went inside for a few minutes and came outside to my son devouring the whole bowl! He had it all over himself from head to toe with a huge smile on his face…it was hilarious 🙂 Love it when you make something healthy and they think it’s sneaky cheeky.
A family friend of ours and her 5 year old daughter was eating it once as well and I asked her, what is this hummus stuff you’re eating? Do you like it? She nodded her head and said, “I love it…did you know it’s a kind of cheese?” Based on this 5 year olds assumption, hummus can be used as a replacement for cheese as well! Love it…x
Original crazy good easy hummus
2-3 cups soaked chickpeas (overnight in fresh filtered water – change the water once)
1/4 cup extra virgin olive oil (start with less and add more if you need)
juice of one medium lemon or lime
1/4 cup of water (use if needed to help the blending process)
1/2 teaspoon of Himalayan or Celtic Sea salt
1 clove of garlic
Simmer chickpeas in just enough water to cover for around 1 hour or until soft.
Allow to cool a little.
Place chickpeas, extra water from cooking, half of oil, lemon juice, salt and garlic in blender and blend until all ingredients are desired consistency.
Add more water and oil to your taste and blend well. That’s it – easy hummus done!
Serve with crackers, corn chips, carrots, celery, veggies…mmmm 🙂
